Brewing tea at a higher temperature allows for greater extraction of flavor.

• Most black teas are brewed at approximately 204°.
• Green tea can be brewed at a lower temperature, but should not be lower than 170°.
• Most herbal infusions are brewed at approximately 204° and above.
